I’m a HUGE fan of pasta – especially the protein-filled kind – but sometimes I don’t feel like doing the savory thing…
One of my favorite dishes of all time is Thai Sticky Rice with Mango, and so I decided to recreate that here with @banzapasta Chickpea Rice and the juiciest Peach that there ever was! Filled with 11g of protein and 5g of fiber per serving, this is such a great plant-based meal – even though it tastes like dessert.

INGREDIENTS:
- 1 box @banzapasta Rice
- 1/2 cup @cocogoodsco Coconut Cream
- 2 TB Chia Seeds
- 1 tsp of Vanilla Extract
- 1/4 cup of Erythritol (or other sweetener of choice)
Toppings:
- 1/2 of Peach
- agenerous helping of Manuka Honey
- 2 TB. Coconut Chips with Sunflower & Chia Seeds (although that was after the picture)
DIRECTIONS:
- Boil 4 cups water with a heavy pinch of salt
- Add in a bag of @banzapasta Rice
- Cook for 4-5 minutes, or until al dente
- Drain and rinse with cold water
- Pour the Rice into a bowl and add in 1/2 cup @cocogoodsco Coconut Cream
- Stir in 2 TB of Chia Seeds
- Also add in 1 tsp of Vanilla Extract and 1/4 cup of Erythritol (or other sweetener of choice)
- Allow to cool in the fridge before serving
- I topped mine with a 1/2 of Peach and agenerous helping of Manuka Honey – and then some Coconut Chips (although that was after the picture)
- Now eat and enjoy!
