Paleo-friendly, Gluten-free, and Oh-So-Good!
It’s definitely a baking kind of day here, with the temps dropping way lower than normal and the rain falling nonstop since yesterday evening. Ohhhh, and the fact that I have WAY too many overly ripe bananas and need to go to the store (but am totally avoiding leaving my house), has enticed me too…
So there was this: Protein-Packed Cinnamon Banana Bread! After pealing and smashing all my Bananas, I realized I had run out of my go-to Gluten-Free Flour too, so had to come up with a sub (and I knew that making it solely with Quinoa Flour wasn’t going to give me the taste I was looking for). Thankfully, I always have TONS of Protein Powder on hand, and knew that my Plant Protein Complex would fit the bill perfectly!
And it totally did! I mean the texture here was way better than expected!

INGREDIENTS:
- 4 small, very ripe Bananas
- 4 Eggs
- 1/4 cup Honey (Maple Syrup works here too)
- 1/3 cup Flaxseed Meal
- 1/3 cup Erythritol
- 1 cup Quinoa Flour (Gluten-Free Flour works great here too, this is just what I had on-hand)
- 1 cup @nowfoodsofficial Plant Protein Complex
- 2 tsp Cinnamon
- 2 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Sea Salt
DIRECTIONS:
- Peel the Bananas and use a large fork to smash and then stir them until they are almost liquidy in substance.
- Beat the Eggs into the same mixture until thoroughly combined.
- Next, stir in the Honey, Flaxseed Meal, and Erythritol and set aside.
- In a separate bowl combine the Flour, Protein, Cinnamon, Vanilla Extract, Baking Soda, Baking Powder, and Sea Salt.
- Pour the liquid Banana mixture over the Protein mixture, and thoroughly combine.
- Spray a bread pan with oil (I used a Coconut Oil spray here), and then pour the mixture into the pan.
- Bake on 375 degrees for 25-30 minutes until a toothpick comes out clean. I like to cover the bread with tin foil for the last 5 minutes so it doesn’t get too dark, but that’s just preference J.
- Allow to cool before slicing.
- Eat and enjoy!
